Donggeurangttaeng (Pan-fried Meat Patties)
Mix drained tofu with ground pork, carrot, and Korean leek, shape into rounds, coat in flour and egg, and cook over medium-low heat until cooked through.

Wrap the tofu in cheesecloth, squeeze out the water firmly, and mash it. Finely mince the carrot and leek.
If you don't squeeze out enough water, the patties fall apart in the pan.

In a bowl, mix the pork, tofu, carrot, leek, garlic, salt, pepper, and 1 egg until sticky.

Shape into bite-size rounds, dust lightly with flour, and dip in the rest of the egg, beaten.

Heat the oil in a pan over medium-low heat and cook the patties 3 minutes per side, flipping once, until cooked through. If they're thick, cover and cook 2 more minutes.

Storing leftovers
Cool the cooked patties, store airtight in the fridge, and eat within 2 days. Reheat in a covered pan over low heat so the outside doesn't burn and the center gets hot. If you made a big holiday batch, freeze in single-meal portions and use within 3 weeks, reheating from frozen in a pan over low heat.
Serve with
Rice, vinegar soy dipping sauce, and sikhye (sweet rice drink). Serve on a holiday or party jeon platter.

How do I keep donggeurangttaeng from falling apart?
If water is left in the tofu or the mixture isn't kneaded enough, the patties crack and fall apart in the pan. Squeeze the tofu hard in cheesecloth and knead the mixture by hand in one direction for 2 to 3 minutes until it turns sticky. If it's still too wet, mix in 1 Tbsp of flour.
