Storing leftovers

Because it contains shrimp, don't keep it long. Cool, store airtight in the fridge, and eat within 1 day; reheat in a pan with 1 Tbsp water over medium heat, breaking up the rice, until hot all the way through. The shrimp gets tougher each time it's reheated, so if freezing, divide into single portions, use within 2 weeks, and stir-fry only briefly to reheat.

Serve with

Doenjang-guk (soybean paste soup), kimchi, and danmuji (yellow pickled radish). It's a filling one-bowl meal on its own.

Why is the shrimp in my fried rice tough?

Shrimp quickly turns tough and curls up when overcooked. That's why you stir-fry it for just 2 minutes at the start, set it aside, and add it back only for the last minute. Pat thawed frozen shrimp very dry so it doesn't release water in the pan.
